Simply Sensational Basic Low Carb Chocolate Cake

This is a fantastic, rich chocolate cake that goes well with any type of low carb icing. We’ve had it with milk chocolate buttercream, a peanut butter buttercream, and as a Copycat Hershey Bar cake using low carb Sukrin milk chocolate bars. Delicious!!!

Basic Low Carb Chocolate Cake

¾ cup heavy cream
1 tbsp. apple cider vinegar
2 cups almond flour
¾ cup oat fiber
¼ cup coconut flour
¾ cup cocoa powder
¼ tsp instant coffee granules
1/2 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 ½ cup Sukrin:1 or your preferred Low carb sweetener (www.sukrinusa.com use code friends for a 10% discount)
1 tbsp vanilla extract
7 eggs
1 cup melted butter, unsalted (8 ounces)
4 to 5 drops of liquid sweetener to taste
First, add apple cider vinegar to the heavy cream and set aside. Mix all dry ingredients really well and set aside. In another bowl, mix eggs, vanilla, and melted butter. Add wet ingredients and heavy cream mixture to dry ingredients and mix with a hand mixer.
Pour batter into your choice of cake pans. You can use 8 inch round cake pans, a bundt pan, muffin tins, or even a 9” by 13” baking dish. For the three 8 inch round cake pans I used, we baked it for about 16 minutes. Press lightly on the center of the cake to see it it’s done. I should be fairly firm to the touch. Do not over cook.
