Simple Carne Asada! Mexican Beef

Recipe for Mexican Beef (Carne Asada)

3 to 3.5 lbs of beef thinly sliced
2 tablespoons cumin
2 tablespoons chili powder
1 tablespoon paprika
1 tablespoon smoked paprika
1 tablespoon oregano
1 teaspoon salt
1 tablespoon minced garlic
1/3 cup Lime juice
½ cup avocado oil (or your preferred oil)

Mix dry spices. Reserve three to four tablespoons of dry spice. Mix dry ingredients with garlic, oil, and lime juice to make marinade and pour over meat. Let marinate for 4 to 6 hours or over night.
After the meat has marinated, cook for about 8 hours in a slow cooker or for about 45 minutes in a very large skillet. After browning the meat, cover and let simmer on low for about 45 minutes. Remove the cover to the skillet and let the liquid cook off.
In a separate pan, prepare the vegetables.
2 tablespoons avocado oil or bacon fat
1 large onion, sliced
1 large bell pepper, sliced
2-3 jalapeno peppers (or 1 to 2 poblano peppers), sliced
2 tablespoons spice mix from above
Juice from one lime
Sprinkle of salt

Saute veggies in avocado oil or bacon fat, as it begins to cook, add spices. Add more oil or lime juice as the veggies cook.
Serve with sour cream, avocado (avocado crema), cheese, and/ or low carb salsa!
