➞ Ingredients (makes 6 servings):
**Note: the below ingredients are for HALF of the total recipe, so you could get 12 servings if you wanted to and if you had a large enough CrockPot/SlowCooker.

2 x 14.5 oz Cans of Diced Tomatoes
3-5 Stalks of Celery – Ends removed and the rest diced
½ Medium Onion – Diced
2 Cups Chicken Broth or other broth
¼ Cup Basil – Fresh or Dried

After Slow Cooked Add:
¼ Cup Grated Parmesan Cheese
½ Cup Heavy Cream
½ tsp Ground Pepper
Salt to Taste

➞ Directions:
1. Add tomatoes, celery, onion, basil, and broth to a slow cooker and cook on low for 8-10 hours.
2. .Once cooked, use a hand blender/immersion blender to puree the soup.
3. Add the parmesan, cream, salt and pepper and stir.
4. Serve!

*Notes: I would probably not add as much celery or onion next time – Didn’t think it was needed and I felt the onion didn’t puree enough.
