Recipe makes 2 servings

Ingredients
– 2 Eggs
– 1 Egg Yolk
– 75 grams melted butter
– 1/2 Tsp Vinegar of choice
– 2 Slices of Ham
– 1 Portion of HK’s Mug Bread cut into 2 slices
– 5 grams butter
– Salt & Pepper
– Lime juice

Preparation
1. Butter the mug bread and toast on a pan.
2. Fry the ham on the same pan
3. Poach 2 eggs
4. Make the hollandaise by whisking together the vinegar and egg yolk while slowly drizzling in the butter
5. Keep whisking over a ban marie till the sauce thickens and finish by seasoning with salt, pepper and a little lime juice
6. Assemble the eggs benedict by layering the toasted bread with the ham, then the egg and finally pouring the hollandaise over it.
7. Enjoy!
