Best Blondie Recipe ever, and as Keto Blondies go these are sugar free and gluten free Blondies. Blondies are basically brown sugar brownies without the cocoa / chocolate but with chocolate chips, which in this healthy recipe version become cocoa nibs.

This might seriously be the best Keto sweet I ever managed to make. Seeing The Great British Bake Off special of Stand Up To Cancer having Blondies made last week I quickly tried to find a way to indulge without carbs, and here we go. Almond Flour and Almond butter are crucial to texture, you can theoretical replace them amongst each other in a 1:1 ratio as I’ve seen it done in many low carb recipes, but I haven’t tested that myself on this recipe. If you don’t have Sukrin Gold or a brown sugar replacement it might be worth taking a look into getting Molasses flavouring so that should make up for the burnt sugar flavour along with any sweetener you will use. And we went Cocoa Nibs rather than sugar free chocolate chips cause this new brand I found has only 5g per 100g, meaning it added less than 3g per the entire recipe in the amount we used. And it gives a lovely crunch!
