Greek Meat Balls and Tzatziki Sauce (Cooking Keto with Kristie)

Meatballs:

1 ¾ ground beef (can use beef, lamb, or mixture beef & lamb)
1 pkg fresh or 9 oz frozen spinach (microwave 4-5 minutes, then drain and squeeze out most of liquid)
1 Tablespoon fresh mint chopped
2 teaspoons minced garlic
¼ teaspoon salt
1 Tablespoon dehydrated minced onion
4 oz crumbled feta

Mix well with and form into 1 inch round meatballs. Bake 375 degree oven for 12-15 minutes until done.
The meatballs freeze well and can be frozen before or after baking.

Tzatziki Sauce:
1 ¼ cup full fat sour cream (can use greek yogurt) but sour cream is lower carb. Crème Fraiche gives lower carb and higher fat count)
½ cup finely chopped cucumber, drain on paper towel to reduce moisture
1 teaspoon minced garlic
1 Tablespoon lemon juice
1 teaspoon dehydrated onion or finely chopped red onion
¾ teaspoon ground cumin
¾ teaspoon dried dill (can use fresh)
¼ teaspoon salt

Mix all ingredients and refrigerate to let flavors blend. Best if allowed to sit for at least 30 minutes to an hour.
