Eating Low Carb 58: Coconut Flour Pop-Overs

➞ Ingredients (makes 7 servings):
28g Butter (I had to add more as the recipe called for 3 tsps divided amongst 4 poppers)
4 Eggs
½ Cup Milk (I used Almond)
3 Tbsp Coconut Flour

➞ Directions:
1. Preheat oven to 425°F.
2. Divide butter evenly (approx. 4g per) amongst 7 Muffin Cups (I used silicone muffin cups).
3. Stick in the oven until butter is melted/sizzling (approx. 5mins). Once melted, pull out and set aside.
4. Using a blender, combine eggs, milk and coconut flour until batter is smooth.
5. Fill each cup evenly on top of previously melted butter.
6. Bake for 20mins, until golden and puffed. Don’t open the oven door until they’re done, or else they’ll start deflating.

Note: They will deflate a bit as they cool.
