Eating Keto 10: Cauliflower Grilled Cheese

Ingredients (makes 2):
3 Cups ‘Riced’ Cauliflower
1 Egg
1/2 Cup (50g) Shredded Cheese (Mozzarella)
1/2 tsp Salt
1/4 tsp Pepper

2 Slices Cheese of your choosing
1 Tbsp Butter (room temp)

Preheat oven to 450°F and line a baking sheet with parchment paper and cooking spray. Put riced cauliflower in a microwavable dish and cook on high for 8 mins. Let cool for about 10 mins. Place cooked cauliflower into a dish cloth and ring out as much water as possible! Once rung out, transfer to a medium bowl and add the remaining ingredients (aside from cheese slices). Spread cauliflower mixture out onto the prepared baking sheet into 4 bread shaped squares/rectangles (try and keep them even).
Place in the oven for approx 16mins (until golden brown). Remove from oven and cool 10mins.

Now, heat a griddle or frying pan to medium heat. Butter one side of each slice of ‘bread’ (perferably the top part) and place on slice of bread in the pan (buttered side down) and add cheese slice and then the other slice of ‘bread’ (buttered side up). Repeat with remaining ingredidents. Let cook for approx. 2-4 mins, or until golden brown. Flip and cook for another 2-4mins.
