➞ Ingredients (makes 2 serving):
6 Large Eggs – hard boiled, peeled, and cooled
2 Tbsp Mayo
1 tsp Dijon Mustard
1 tsp Lemon Juice
1/4 tsp Lite Salt (Potassium)
Salt and Pepper to taste

➞ Directions:
1. Chop your hard boiled eggs into small pieces or use a food processor.
2. Combine all ingredients in a bowl and mix.
3. Season to taste!
