➞ Ingredients (makes 4 servings):
1 Tbsp Butter
½ White Onion – diced (I had 150g)
1 tsp Garlic – minced (source doesn’t specify amount of garlic, I just used 1 tsp)
1 Cup Heavy Whipping Cream
2 Cups Broth (of your choice, I used Chicken)
2 Cups Water
12oz Broccoli Florets
8oz Cheddar Cheese (I used 200g)
Salt and Pepper to taste
½ tsp Paprika
¼ tsp Xanthan Gum

➞ Directions:
1. Melt butter in a large pot and saute garlic and onion until translucent.
2. Add cream, broth, and water and bring to a boil. Add salt, pepper, and paprika.
3. Once it’s boiling, add broccoli and reduce to a simmer. Cook for 25 mins.
4. Add cheese and stir until melted. (smaller pieces will melt faster)
5. Once melted, turn off heat and transfer soup to a blender or use an immersion blender and blend until no chunks remain.
6. While blending, add xanthan gum slowly. This should start thickening the soup up.
