➞ Ingredients (makes 4 servings):

2 Tbsp Red Onion – Minced
1.5 Cups Cherry Tomatoes – Chopped
1 Cucumber – Peeled, seeded and diced
1 Avocado – Diced
2 Tbsp Parsley – Minced
4oz Feta Cheese
2 Tbsp Olive Oil
1 Tbsp Red Wine Vinegar
8 ‘twists’ of Black Pepper

➞ Directions:
1. Chop/dice/mince all ingredients (except the olive oil, red wine vinegar, and black pepper) and add to a bowl.
2. Whisk together olive oil, red wine vinegar, and black pepper and pour over salad and toss gently.
3. Serve immediately. If refrigerating, keep avocado separate until ready to serve.
