Ingredients (makes 12):

▽ Crust:
½ Stick of Butter (57g)
½ Cup Almond Meal

▽ Filling:
2x 8oz packages of softened Cream Cheese
¾ Cup of Splenda (I used Truvia)
1 tsp Vanilla
2 Eggs

Directions:
1. Preheat oven to 350°F.
2. Melt butter and still in the almond meal.
3. Place a small amount in the bottom of each 12 cupcake liners and pat down to form the crust.
4. Using a stand mixer or hand mixer, combine cream cheese, eggs, sweetener, and vanilla and mix on medium speed until smooth.
5. Once smooth, fill the cupcake liners almost to the top.
6. Bake for 15-17 mins.
7. Cool on the counter and then chill overnight.
