Ingredients (makes 1):

▽ Crust:
2 Tbsp Parmesan Cheese
1 Tbsp Psyllium Husk Powder
1/2 tsp Italian Seasoning
2 Large Eggs
Salt to Taste
2 tsp Frying Oil

▽ Topping:
1.5 oz Mozzarella Cheese (I used 30g)
3 Tbsp Tomato/Pizza Sauce (I used 60mL)
1 Tbsp Fresh Basil (I used a lot more)

Directions:

1. In a bowl that will allow the use of an immersion blender, combine all dry ingredients.
2. Add eggs and blend for at least 30 secs.
3. In a frying pan, heat oil at medium-high heat.
4. Once hot, spread batter out like a pancake.
5. Once bottom is browned, flip over and brown underside.
6. If using an oven proof pan, leave crust, if not, transfer crust to a baking sheet.
7. Spread sauce and cheese on crust.
8. Broil in oven for a few mins (until cheese is melted) **Keep your eye on this**
9. Once out of oven, top with fresh basil, cut and serve!
