➞ Ingredients (makes 3 servings):
1.25 Cups Mozzarella Cheese
1/4 Cup Almond Flour
3 Tbsp Coconut Flour
1 Tbsp Butter – melted
1 Egg
1/4 tsp Garlic Powder
1/2 tsp Sea Salt
1 tsp Xanthan Gum (Optional)
1 Tbsp Butter – melted with 1 tsp chopped Garlic (Optional)

➞ Directions:
1. Preheat oven to 400°F.
2. Microwave cheese in microwave for 80secs.
3. Add remaining ingredients except for the optional melted butter and garlic. Stir well. It may be hard to do, but if needed, microwave for another 20-30 secs.
4. Once you have a dough (it may not all look combined/consistent in colour), split the dough into 3 equal portions.
5. On some parchment paper or baking mat, roll/flatten each portion to make a rectangle.
6. Place toppings on one half of the dough, leaving an approx 1/2 inch space to ensure you will be able to seal the pockets.
7. Fold the dough so that it creates a pocket and firmly press the sides together to seal. I even used a fork to help seal and then they semi looked more like real pizza pops.
8. Optional step: Brush melted butter on each pizza pocket and top with garlic (I brushed butter but not garlic)
9. Bake for 20 mins until golden brown. Allow them to cool for a few mins before serving as they will be hot!
