Low-carb flourless chocolate biscuits

Ingredients (Yields 12):
45g Cocoa Powder
50g Truvia (or similar granular sugar substitute
60g (2oz) Unsalted Butter
60g (2oz) Cream Cheese
2 Large Eggs
1 tsp Vanilla Extract

Preheat oven to 375°F and prepare a cookie sheet with parchment paper. Blend cream cheese with Truvia until smooth. Lightly beat the eggs and mix with melted butter and vanilla extract. Add egg mixture to cream cheese and mix well until no lumps. Gently fold in cocoa powder. Spoon mixture into round shapes – You may want to press/flatten them yourself (mine didn’t seem to move from the shapes I made) Bake 10-15mins and ensure you check on them frequently so they don’t burn! Let them cool completely.
