➞ Ingredients (makes 10 servings):

1.5 Cups Shredded Mozzarella Cheese
3 Tbsp Cream Cheese
1 Large Eggs (room temperature)
2 Tbsp Psyllium Husk Powder
1 Tbsp Pretzel Salt or Course Sea Salt

➞ Directions:
1. Preheat oven to 375°F and line a baking sheet with parchment paper.
2. Add mozzarella and cream cheese to a microwavable bowl.
3. Microwave cheese for 90 secs and stir together with fork or whisk.
4. Add egg and keep stirring until well combined. You may need to re-microwave mixture for another 10-20 secs to keep dough soft.
5. Add psyllium powder and stir until fully incorporated.
6. Knead dough with hands a few times and divide dough into 10 balls (I weighed mine out)
7. Roll each ball out into long logs and twist into a pretzel shape if desired.
8. Place each pretzel onto your prepared baking sheet.
9. Lightly brush a little water onto each pretzel, followed by a light sprinkling of salt.
10. Bake 20-25 mins. Rotate the pan half way through baking.
11. Let cool and eat!
