Ingredients for lollipop:
8 Chicken drumsticks with skin on
1 large egg
Salt to taste
1 tsp black pepper powder
2 tsp freshly grated ginger
2 tsp freshly grated garlic
20 gms of red chilli paste
30-40 gms unflavoured whey protein isolate powder
Oil for deep frying
Ingredients for sweet and spicy sauce:
30 ml olive oil
1 tsp freshly grated ginger
1 tsp freshly grated garlic
1/2 chopped red onion
2 green chillies chopped
salt to taste
3/4 tsp black pepper powder
15 gms red chilli paste (add more or less depending on how hot you can handle)
20 gms sugarfree tomato ketchup
handful of chopped coriander
30 ml water
5 gms stevia (add more if you want your sauce even sweeter)
Create “lollipops” by placing each chicken drumstick on a cutting board, cutting the non-meat end around the bone with a knife and then hold the bony end with one hand, pushing the meat up and toward the meaty end with the other hand. Repeat the same process for all drumsticks.
Add all ingredients except whey protein to chicken lollipops, and give the chicken pieces a good massage.
Let the marinated lollipops sit in the fridge for atleast 4 hours.
Coat the marinated lollipops with whey protein and deep fry them on medium heat for around 4-5 mins each side.
Once done take the deep fried lollipops out of the oil and get ready to preparethe sauce.
For sweet and spicy sauce:
Heat oil in a pan and add ginger and garlic. Saute for a minute.
Add chopped onion and green chillies and saute until onions are translucent (roughly 2-3 mins)
Add salt and black pepper and mix well.
Add red chilli paste and sugarfree ketchup. Mix well and cook for a minute. Add chopped coriander as well.
Add water and stevia, and bring the mixture to a boil. Sauce is ready.
Gently pour the sweet and spicy sauce over your deep fried chicken lollipops and you are all set 🙂
